Directions
Preheat the oven to 350°F and line two baking sheets with parchment paper.
In a spacious bowl, blend together the flour, baking soda, baking powder, salt, and cinnamon. In another bowl, vigorously whisk together the melted coconut oil, sugar, whole egg, egg yolk, and vanilla until thoroughly combined.
Mix the wet ingredients into the dry ingredients until well combined. Gently fold in the oats, raisins, and walnuts if desired, until the mixture forms a cohesive batter. Allow the dough to rest for 20 minutes while the oven preheats. (Note: If the dough appears too moist to scoop, refrigerate it during this 20-minute period to firm up. Conversely, if the dough seems too dry and crumbly, incorporate 2 to 3 tablespoons of water.)
With a cookie scoop, portion the dough into 20 tablespoon-sized balls. Gently roll them into round shapes using slightly damp hands. Arrange them evenly on the prepared baking sheets. Bake until they puff up, turn golden, and appear slightly underbaked, about 10 to 11 minutes. Allow the cookies to cool on the pans for 5 minutes before transferring them to a wire rack to cool completely.
