2 teaspoons pure vanilla extract

4 tablespoons butter, melted and slightly cooled
Directions
Ensure that eggs and milk are at room temperature to achieve optimal fluffiness.
Preheat waffle iron.
Sift together flour, sugar, baking powder, and salt into a large mixing bowl.
Divide the egg whites from the yolks. Place the whites into a medium mixing bowl and set them aside momentarily. Combine the yolks with the milk. (I prefer using a 2-cup glass measuring cup for measuring the milk and then blending the wet ingredients directly in the measuring cup.)
Add vanilla to milk mixture and whisk together until well combined.
Pour in slightly cooled melted butter and whisk to thoroughly.
Pour the wet ingredients onto the dry ingredients and gently stir until just combined. It's okay to have some lumps of flour; avoid over-mixing.
Let batter rest while you whip the egg whites.
Using an electric mixer, whip the egg whites until they form stiff peaks. This indicates they are white and glossy, and when you lift the mixer out of the egg whites, a little point at the top should stand straight up. Be cautious of overbeating; stop once you reach this stage.
Transfer the whipped egg whites into the bowl containing the batter and gently fold them in using a silicone spatula. Leave streaks of whipped egg white visible throughout the batter. Avoid over-mixing to prevent excessive deflation of the egg whites.
Spray waffle iron with nonstick cooking spray, or brush very lightly with vegetable oil or melted butter.
Add batter to waffle iron according to manufacturer’s instructions and cook until waffles are golden brown.
Serve immediately or maintain warmth by placing the waffles in a 200°F oven while completing the cooking process. You can position the waffles directly on a clean oven rack or on a baking rack set inside a rimmed baking sheet.
