Creamy Vanilla Cheesecake

- 3 cups of graham cracker crumbs
- 1 and ½ sticks of butter
- 1/3 cup of brown sugar
- 48 ounces (6 packages) of cream cheese, softened
- 2 cups of brown sugar
- 4 tablespoons of Native Vanilla Extract
- 1 teaspoon of salt
- 6 eggs
Preheat to 325 degrees. Mix cracker crumbs, brown sugar, and butter. Grease a 9 inch springform pan and lightly press the mixture onto the bottom of the pan and up 1 inch.
In a bowl, mix the sugar and cream cheese until smooth. Add vanilla and salt and mix well. Add eggs and beat on low speed until fully blended. Pour mixture into the crust and place on a baking sheet.
Bake for 50-60 minutes or until center is almost set. Cool on a wire rack for 15 minutes and then loosen the sides from the pan with a knife. Cool for another 50-60 minutes. Refrigerate overnight.
